These vegan and grain-free nori rolls are a great lunch or light meal idea, and are surprisingly filling, leaving you feeling energized. The beautiful combination of fresh, colourful vegetables is a nice addition to any table. No cooking involved makes these nori rolls perfect for those hot summer days. Serve them with tamari and wasabi, just like regular sushi rolls, along with some almond sauce for a different variation. You can also saute some tofu slices to add to the vegetables if you’d like.

The no rice nori rolls can be sliced into 6 pieces per nori sheet, or the grain-free nori rolls can be made into a cone-shaped roll. To make the cone nori roll, start by cutting the nori sheet in half, and add your vegetable fillings in a triangle at one corner of the nori. Then, fold the nori sheet over the vegetable fillings, creating a cone shape. Moisten the edge of the nori with a bit of water to secure.

No Rice Nori Rolls
Makes 4 rolls with 6 pieces each
1 avocado, sliced
1 cucumber, cut in half, then thinly sliced with mandolin
1-2 medium carrots, thinly sliced with mandolin
1 cup shredded purple cabbage
1/2 cup broccoli sprouts
4 sheets nori
Almond Sauce
1/2 cup almond butter
1/4 cup water
3 tablespoons tamari
2 tablespoons lime juice freshly squeezed
1 tablespoon apple cider vinegar
1 tablespoon maple syrup
1 garlic clove
1 tablespoon grated fresh ginger
1/4 to 1 teaspoon red pepper flakes
For almond sauce, combine all ingredients in a blender or food processor, and blend on high speed until smooth, adding more water if needed to achieve proper consistency. Serve almond sauce in individual bowls for dipping.
To assemble nori rolls, place 1 sheet of nori with the shiny side down on a sushi mat. Place about 1/4 of the vegetables on the nori, leaving 1 inch at the top of the sheet. Then carefully lift the bottom edge of the nori roll and start to roll over the filling, while lifting the end of the sushi mat to press the roll. Continue to roll till you get to the top, which you will moisten with a bit of water to secure the roll. It may take some practice, but you’ll get better as you go along. It’s important to roll the nori roll as tightly and evenly as possible. Slice the nori roll into 6 pieces, and repeat with the remaining nori sheets and ingredients.
